TACOS AL SCOTTIE
You will need:
- 2 lbs pork tenderloin
- 2 packages of street taco tortillas
- 1 can of pineapple in its own juice
- 1/3 cup vinegar
- 2 white onions
- 2 bunches cilantro
- 3 garlic cloves
- 3 limes

1. Take 2 lbs of pork tenderloin and chop it up to little bits. The smaller the better, but we dont want to grind it either. Put it in a bowl.
2. Take 1 cup of pineapple and cut it up into little bits and place it with the pork.
3. Take 1/4 of one of the white onions, 1/2 cup of pineapple, 1/2 cup pineapple juice, 3 garlic cloves, 1/3 cup of vinegar. Puree in food processor. Place puree with the pork.
4. Add 1 tablespoon of sugar, oil, and 1/2 tablespoon salt.
5. Mix it all together and let it sit in the fridge for 24 hours. You can skip the 24 hours part but the spices wont be slightly more infused and the vinegar and pineapple tenderizes the meat.
NOTE:
We need high heat and not so much meat at a time in order to slightly char the meat. We do not want to boil the meat. We need a maillard reaction here to be fancy pants. If your using a standard stove only cook one cup of the meat mixture at a time.
6. Pre heat the pan with a bit of oil on as high as it will go.
7. Place 1 cup of meat into the pan and spread the meat out and leave it alone.
8. Wait until you smell a good burning smell and can see a color change then toss the meat with a spatula. Scrape the burning juices on the bottom of the pan back into the meat. That is where all the flavor is going to come from. You need to let it burn but not so much it goes black and bitter. There’s a sweet spot for sure.
9. Toss it a few times like this until the meat is dark and juicy. It shouldn’t take longer than five minutes if your pan can actually get hot.
GARNISH:
Take two of the tiny street taco torillas and put them under the sink and get them wet with water. Place them on a microwavable plate. Put a piece of dry paper tower on top. Then repeat for as many tacos as you want. One cup of meat makes about four tacos. Put the stacked tortilla/towels in the microwave and microwave for 30 seconds at a time flipping the stack of tortillas each time. Get them steamy hot. Should take about 2 minutes of microwave time for 8 tortillas (four tacos)
6. Seperate the tortillas onto a plate, put the cooked meat on them and garnish with chopped white onion, cilantro, and a squeeze of a slice of lime. Best enjoyed with a Jarritos.
